Depending on time of the year and interest, we can also watch some of MCC’s intricate production methods like dosage, the proprietary and often fiercely protected blend of base wine plus for e.g. grape sugar used to top up the bottles when they are ready for corking (following the 2nd fermentation and aging under crown cap), or try your hand at riddling, the traditional method of gradually moving the lees (spent yeast) into the neck for disgorgement – or ejection of the lees when the crown cap is popped in preparation for the dosage.
